Redacted Bottlers is a passion project created by friends Ronan and Michael to capture the essence of single-cask whiskies from some of the best up-and-coming distillers in Ireland. The second release from Redacted Independent Bottlers is a bold and distinctive Double Pot Distilled Irish Whiskey crafted at the Blackwater Distillery in County Waterford. Bottled at 44.12% ABV, this small-batch expression showcases a uniquely complex mash bill made entirely from Irish-grown grains, featuring 5% rye, 15% oat, 10% wheat, 35% unmalted barley, 30% malted barley, and 5% Irish turfed malt. The result is a rich, layered spirit that draws depth from an innovative vatting of four different cask types, each adding its own character to the final profile. Following this intricate maturation process, the whiskey was finished for 12 months in a Widow Jane Bourbon barrel, imparting warmth, sweetness, and additional structure. Limited to only 252 bottles, this release offers a rare opportunity to experience an Irish whiskey that embraces innovation while staying rooted in traditional pot still craft. It’s a daring, terroir-driven expression with both character and clarity.
