This exceptionally rare release from Two Stacks, known as Polaris 1.3, is a 6-year-old blend of single malt and pot still Irish whiskey, crafted with meticulous care and a flair for innovation. Comprising roughly 110 litres of single malt and 105 litres of pot still whiskey, the spirit was aged for over five years in ex-bourbon barrels before undergoing a dual-stage finish in French oak casks previously used for Cabernet Franc Ice Wine from Ontario, Canada. First married in a second-fill cask in December 2022, it was later transferred to a fresh first-fill ice wine barrel in March 2023, resulting in a whiskey of stunning depth and balance. Bottled at cask strength and non-chill filtered, this expression is limited to just 308 bottles, each hand-labeled, wax-sealed, and stamped with the Polaris symbol, underscoring its artisanal nature. The nose greets with luscious notes of strawberry, red apple, and warming allspice, while the palate delivers a velvet texture layered with cherry, marzipan, cinnamon, clove, and a rising note of chili heat. The finish is complex and enduring, gradually fading into dark cacao and the subtle dryness of a fine Italian espresso—an extraordinary dram for collectors and connoisseurs alike.
