Redacted Bottlers is a passion project created by friends Ronan and Michael to capture the essence of single-cask whiskies from some of the best up-and-coming distillers in Ireland. The mysterious Redacted Release 002 is a 20-year-old single grain whiskey distilled at the historic Cooley Distillery and bottled at 56.5% ABV in a sleek 20cl format. Matured solely in American oak ex-bourbon casks, it delivers a scent of green banana, vanilla custard, honey, and oat cereals. The palate is impressively smooth for its grain style, with creamy butterscotch, white chocolate, baked apple, and warm spice folded into a silky texture. The finish is medium-long, with a soft warming sweetness and lingering caramel notes.
