Polaris 4.1 marks a bold step in the exploration of Vintage Mash Bill No. 5, revived from an 1892 archive by historian Fionnán O’Connor and brought to life by Boann Distillery. This unique single pot still whiskey features a traditional mash of 30% oats, 40% unmalted barley, and 30% malted barley, fully matured in a single oloroso sherry hogshead, yielding just 252 bottles. On the nose, rich sherry notes lead with treacle, raisins, and gingerbread, layered with orange peel and a hint of peppermint. The palate develops beautifully with time, offering sticky toffee pudding, baking spice, and creamy dates, while the finish fades into delicate spice, fig, and dry cocoa nib.
