Cónocht an Fómhair, translating to “autumn equinox,” is the eighth release in Dingle’s Celtic Wheel of the Year series and the final Single Malt in the collection. This expression is matured in bourbon casks and finished in rum casks, resulting in a whiskey that embodies the richness of the harvest season. The nose features fresh mint, rhubarb crumble dusted in brown sugar, toffee apple, and icing sugar. The palate offers tropical fruits, sweet raisins, honey, coconut, and hazelnuts. It concludes with a clean finish highlighted by spiced fruits and warm caramel notes.
