Cava gets a raw deal these days – it’s all about prosecco – but if you’re looking for an affordable alternative to champagne then cava may well be your best bet. It’s made in the same way (the bubbles are produced in the bottle rather than large tanks as is the case with prosecco) and shares a similar taste profile; it tastes of lemon shortbread, but wetter.
